Nut & Seed Porridge
ingredients
1 cup oats
1 cup non-dairy milk
1 cup water
1 tsp cinnamon
1 tbsp chia seeds
1 tbsp flaxseeds
Handful of dates
Handful of nuts (I used almonds and walnuts)
Drizzle of maple syrup
method
In a pan over low to medium heat, mix the oats, milk, water, cinnamon, chia seeds and flaxseeds. Stir through and keep stirring as it cooks.
Meanwhile, roughly chop up the dates and nuts.
Add in the dates to the porridge and continue cooking until thickened to desired consistency.
Serve and top with the nuts and a drizzle of maple syrup.

If you’re vegan, it’s important to make sure you’re getting lots of healthy fats that can be found in nuts and seeds. So this porridge is a great and filling way to do that!
Try adding some of your favourite fruits on top in replacement of the maple syrup for added sweetness. Bananas, berries, apples or peaches would work beautifully.
You don’t have to add this combination of nuts and seeds, just use what you have in your cupboard or what is affordable for you.
