Tofu Scramble
ingredients
1/2 red onion
1 garlic clove
Olive oil
1/2 red pepper
1 tsp turmeric
1/2 tsp cumin
Block (400g) of firm tofu
1 tbsp soy sauce
Salt and pepper
Large handful of spinach
method
Chop and fry onion in a pan with olive oil over medium heat until softened.
Meanwhile, chop the pepper.
Add the garlic along with the spices and stir fry for a minute or two.
Add in the red pepper, with a dash of water if needed.
Crumble in the block of tofu with your hands to create the egg-like texture. Stir in with the soy sauce and seasoning. Fry for around 5 minutes, or until everything is cooked.
Finally add in the spinach and stir through until wilted.
Serve over toast for breakfast, or alongside rice and potatoes for a lunch/dinner meal.
notes
Add whatever vegetables you like or have to hand. Mushrooms or tomatoes would work really well in the scramble.
Try alongside some avocado (because avo makes everything better).
Mix in some nutritional yeast or grated vegan cheese for a cheesy scrambled taste.
