A classic Chrismtas condiment, Apple and Cranberry chutney is one of my favourite things to eat with my roast or Boxing Day sandwich. It also makes a thoughtful festive gift!
This dish was inspired from the traditional Indian street food dish, Pineapple Chaat, a tasty side dish you can eat as a stand alone snack or as a refreshing addition to an Indian curry.
An Italian classic and accidentally vegan, bruschetta are such a great option for lunch or as a starter or appetizer. I decided to make these a little different to the classic version by adding some olives, onion and nutritional yeast.
The key thing with bruschetta is to get hold of really fresh high quality ingredients. That means aim for the best seasonal tomatoes you can find making sure they are nice and ripe.
When you’re craving something warm and easy try my favourite pizza toastie. Cheesy, tomato, warm and crunchy - the best vegan lunch or 5 minute snack.
I’m yet to find a more refreshing dessert. Nothing beats a cooling creamy mango sorbet on a hot summers day, especially when it only takes 5 minutes to make. Sorbets are a very easy vegan dessert to make, and you don’t even need an ice cream maker. This one is dairy free and you only need two ingredients.
My favourite variety of dates to use in this chocolate smoothie is Medjool (these tend to a bit larger than other kinds). They are nice and squishy to blend up well.
You can use any date just try and avoid harder drier dates )or soak them in water before hand). Remember, you’re getting lots of plant-based iron and potassium from these small little fruits.

You get the sweetness from the dates rather than banana, and the protein from the tofu keeps it nice and creamy. Make sure to use silken tofu rather than firm tofu for the creamy smoothie texture as firm tofu won't have the same effect.

This pineapple and coconut smoothie is packed full of healthy nutritional ingredients in the form of ginger, carrot and turmeric. It is incredibly refreshing and makes a great snack or breakfast. Turmeric has contains an active compound called curcumin which is widely known to have many scientifically-proven health benefits. If you don’t have frozen pineapple you can substitute for fresh pineapple. Just add in a couple of ice cubes to make the smoothie nice and cold. Or, pop it in the freezer the night before, and you’ve got frozen pineapple!
