3 INGREDIENT VEGAN PANCAKES
Yummy, easy, oaty pancakes with just three main ingredients!
prep time 5 mins total time 25 mins makes 5 pancakes
1 cup (90g) oats
1 cup (250ml) plant milk
1 tsp cinnamon
1 cup (150g) mixed berries
1 tbsp brown sugar
Blend the oats in a food processor until a flour-like consistency has formed.
Add the oats, banana, milk and cinnamon and blend to make your batter.
Heat up a non-stick pan over medium heat and ladle in the batter to form your first pancake. This batter should make about five pancakes.
Meanwhile, add the berries and sugar to a pan on a low/medium and gently cook over medium heat.
When small bubbles start to appear on the pancake, it’s ready to flip. Turn carefully with a spatula and cook the other side until golden brown.
Keep them warm in the oven on a low heat, or briefly microwave when all are cooked.
Serve up, and drizzle over the berry coulis.
Drizzle over some maple syrup for some added sweetness.
Try adding blueberries, chocolate chips or raisins to the pancake batter for a different kind of pancake! You can also add a tbsp of cocoa powder for some chocolate-y pancakes!
