Yummy, easy, oaty pancakes with just three main ingredients!

prep time 5 mins total time 25 mins makes 5 pancakes

  • 1 banana

  • 1 cup (90g) oats

  • 1 cup (250ml) plant milk

  • 1 tsp cinnamon

  • 1 cup (150g) mixed berries

  • 1 tbsp brown sugar

  1. Blend the oats in a food processor until a flour-like consistency has formed.

  2. Add the oats, banana, milk and cinnamon and blend to make your batter.

  3. Heat up a non-stick pan over medium heat and ladle in the batter to form your first pancake. This batter should make about five pancakes.

  4. Meanwhile, add the berries and sugar to a pan on a low/medium and gently cook over medium heat.

  5. When small bubbles start to appear on the pancake, it’s ready to flip. Turn carefully with a spatula and cook the other side until golden brown.

  6. Keep them warm in the oven on a low heat, or briefly microwave when all are cooked.

  7. Serve up, and drizzle over the berry coulis.

  • Drizzle over some maple syrup for some added sweetness.

  • Try adding blueberries, chocolate chips or raisins to the pancake batter for a different kind of pancake! You can also add a tbsp of cocoa powder for some chocolate-y pancakes!
