5 Minute Pizza Toastie
When you’re craving a pizza but don’t have one buried in the freezer or are tight on time, try my pizza toastie. Cheesy, tomato-y, warm and crunchy - the best vegan lunch or 5 minute snack.
Start by getting your bread, and on each slice spread a thin layer of tomato puree.
Now top with salt and pepper, and a big sprinkle of mixed herbs .
Add in grated vegan cheese and, if you like, some of your favourite toppings, such as olives, basil, red onion, peppers etc.
Drizzle with a glug of olive oil and close the two pieces of bread together. Butter the outside of the toastie on each side to get that crispy golden outside.
You don’t need a toastie machine but you can use one if you have it. In this case, place the sandwich inside and toast until golden.
If using a frying pan like I did, drizzle a little olive oil in the pan and fry on each side until golden and the cheese is melted.
Ingredients
2 slices of bread
1-2 tbsp tomato puree
1 tsp mixed herbs (dried oregano, basil, thyme, sage etc.)
25-50g vegan cheese
Olive oil
Salt and pepper
Extra pizza toppings you enjoy (olives, mushrooms, red onion, vegan meat altnerative, peppers etc.)
METHOD
On each slice of bread, spread a thin layer of tomato puree.
Season generously with salt and pepper, and a large sprinkle of mixed herbs.
On one slice, add grated vegan cheese and, if you like, some of your favourite toppings, such as chopped olives, red onion, peppers etc.
Drizzle with olive oil and close sandwich together. Butter each slice of toast on the outside.
If using a toastie machine, place the sandwich inside and toast until golden. If using a frying pan, drizzle a little olive oil in the pan and fry on each side until golden and the cheese is melted.
