AUTUMN APPLE & PEAR PORRIDGE
Seasonal fruits and autumnal spices are the perfect start to the day this time of year!
prep time 10 mins total time 20 mins serves 2
2 tsp cinnamon
Pinch of nutmeg
2 cups porridge oats
2 cups plant milk
2 cups water
Handful of cranberries/raisins
Chop up your apples and pears into bite sized chunks.
Add to a pan over medium heat, with 1 tsp of cinnamon, a pinch of nutmeg and a drizzle of maple syrup. Mix together and simmer.
Meanwhile, start to cook your porridge by adding the oats and liquid into a pan, along with another tsp of cinnamon. Stir on a low to medium heat until creamy.
Keep an eye on the fruit, adding a splash of water if it needs it. It’s ready when everything has softened and formed a sort of compote. The longer you cook it, the more it will reduce and soften.
Serve everything together, with a sprinkling of cranberries and an extra drizzle of syrup.
This recipe can work with any fruit you fancy! I often do this with berries instead, and for the season blackberries could be perfect!
