Broccoli and Apple Salad
When the sun starts to peak its head out from behind the clouds, the spring flowers start to brighten the hedgerows and the weather inevitable starts to warm up there is nothing I crave more than fresh spring salad.
This vegan salad is the perfect combination of light but also filling. There is nothing worse than a salad that doesn’t actually fill you up! The variety of ingredients makes it tasty and perfect on its own or as a scrumptious side.
One of the marvellous things about this salad is that it takes next to no time to put together. Nothing requires cooking so it’s just a case of chopping, mixing and eating!
Whatever you do don’t forget the dressing! This is what pulls it all of the flavours together.
The best salad recipes are those that are versatile and flexible to what you may or may not have in your fridge. If you are missing any of the ingredients these are a few easy ways to change it:
Vegetables Feel free to mix up the vegetables. If you don’t have broccoli, try cauliflower, green beans or brussels sprouts.
Nuts: The walnuts can be substituted for almost any other kind of nut like pecans or hazelnuts.
Dressing: Now I love the simplicity of this dressing but if you have another dressing you need to use up feel free to swap it in.
Broccoli and Apple Salad Serving Suggestions
Now don’t get me wrong, you can serve this salad as the main event. It’s hearty enough! If you fancy something alongside it pair it with my Easy Falafel Burger and Loaded Bread Roll for an outdoor picnic or BBQ.

ingredients
Salad
1 head of broccoli
1 medium carrot, coarsely grated
2 apples
1 small red onion
2 tbsps golden sultanas
50g walnuts or hazelnuts (or nut of your choice)
10 olives, chopped
Small bunch of coriander, chopped
Dressing
Olive oil
2 tbsps apple cider vinegar
Salt and pepper
Zest and juice of half a lemon
method
Chop the broccoli in small florets, and dice the apples . Thinly slice the red onions, chop the olives in half and combine all the ingredients in a large bowl.
Whisk all the dressing ingredients together, pour over the salad with chopped coriander and serve!
NOTES
For a creamier versions of this Broccoli & Apple Salad, add 2 tablespoons of vegan mayonnaise to the dressing.
