Chickpea Tuna

Chickpea Tuna

No fish needed for this delicious sandwich filler, and it's just 5 ingredients!

Before going vegan I loved tuna. In a salad, on a jacket potato, or in a delicious sandwich. So when I made the switch to eating plant based foods, I knew I had to try recreating this with plants instead of fish.

The ingredients, as always, are super accessible and easy. Pantry staples! All you’ll need is:

  • Chickpeas

  • Red onion

  • Vegan mayo (if not, olive oil will do)

  • Lemon juice

  • Vinegar (this really helps add to the tuna flavour as so often vinegar is used when seasoning and flavouring tuna)

  • Garlic powder

  • Salt and pepper

Simply blend the ingredients in a food processor to create your chickpea “tuna” alternative. Don’t overblend, as I find it tastes best when the texture is a bit lumpy, just as tuna would be.

My favourite way to enjoy chickpea tuna is in a big crusty sandwich with vegan butter, lettuce, tomato and extra mayo. It is so classic and all of the flavours come together to create something so familiar and comforting. It’s also perfect atop a big green salad.

Notes :

This recipe should make about 4 sandwiches, but if you're greedy and want to stuff your sandwich like me, maybe it'll just make two or three.

  • You can prep the chickpea tuna at the weekend and simply add to your sandwiches for school or work!

  • If you're at home, why not spread this in a sandwich with some vegan cheese and toast it up in your toastie-machine (if you have one) for a veganised tuna melt! Thank me later.

Ingredients

  • 400g tin chickpeas

  • 2 tbsp vegan mayo (use olive oil if you don't have access to vegan mayo)

  • Juice of half a lemon

  • 1 tbsp vinegar

  • 1/2 red onion

  • 1/2 tsp garlic powder

  • Salt and pepper

Serve with

  • Bread

  • Cucumber

  • Lettuce

  • Tomato

  • More vegan mayo

METHOD

  1. Drain and rinse the chickpeas, and finely chop the onion.

  2. Blend together all of the ingredients in a food processor, leaving some lumps in there for texture.

  3. Spread in a sandwich (or wrap, or pita, or just go ahead and eat by itself on a spoon), and top with a classic mix of sliced cucumber, tomato and some crunchy lettuce. Top with some more mayo because, why not? And enjoy!
