Easy Roasted Parsnips
ingredients
1 tbsp olive oil
1 tbsp vegan butter
3 parsnips
Salt and pepper
method 1
Preheat oven to 200°C (390°F).
Add the oil and butter to a baking tray and heat up in the oven for 10-15 minutes.
Chop the parsnips into strips.
Remove the baking tray from the oven and add the parsnips. Season and mix everything together until evenly coated.
Roast in oven for 20-25 minutes, turning once in between.

These easy roasted parsnips work perfectly as a part of a roast dinner alongside my nut roast, carrots, roast potatoes and brussel sprouts.
