Festive Punch
This virgin cocktail is fruity and lightly spiced with ginger ale and mixed spice.
Juice one orange and one lemon. Chop the other two and add to a large pitcher.
I used my favourite pitcher with matching storer from The White Company, but any will do.
Now you need to deseed the pomegranate and add half of the seeds and juice to the pitcher. The easy way to do this is to hold one half of a pomegranate cut-side down in your hand and bash the top of it with a wooden spoonn or rolling pin so the seeds fall out. I adore the flavour of pomegranate, and they are so good for you to (they’re really rich in protective compounds which have lots of antioxidant properties).
Next add in your sugar and mixed spice to the pitcher.
Top up with ginger ale, sparkling water and ice to finish off your festive punch.
Give everything a good stir and pour into your favourite glasses.
Ingredients
2 lemons
2 oranges
1/2 pomegranate
2 tbsp caster sugar
1 tsp mixed spice
275ml ginger ale
500ml sparkling water
Ice
METHOD
Juice 1 lemon and 1 orange and add to a large pitcher. Slice the other lemon and other orange, and add this in also.
Deseed the pomegranate and add the seeds and juice of half to the pitcher.
Add in the remaining ingredients, stir and enjoy!
