Herby Tahini Dressing
This tahini dressing is one of my favourite vegan condiments to make. Itβs easy, simple and so flavourful - the perfect addition to any salad or sandwich.
Gather up your ingredients, blitz them in a food processor (or you can use a hand mixer) and voila!
ingredients
Juice and zest of 2 lemons
2 garlic cloves
Large handful of fresh herbs (anything you have to hand , I used mint/parsley and coriander)
Good sprinkle of sea salt to taste
Black pepper
125ml (1/2 cup) of water
1/2 tsp dried chilli flakes (optional)
4 tbsps of tahini
(Optional) 1 tbsp maple syrup
method
Place all the ingredients into a blender or food processor and blitz. Add a drop more water if too thick, it should be similar to double cream consistency. Taste and adjust seasoning, adding malpe syrup if too bitter.

This dressing is very versatile and can be used on top of many different dishes such as my Harissa Spiced Tomato One-Pot.
Store sealed in the fridge to use as a dressing throughout the week.
