Leek & Potato Soup

A French classic, this vegan leek and potato soup is quick, easy, and delicious! Top it with fresh herbs, plant-based bacon, or crunchy croutons.
What you need
- onions
- garlic cloves
- potatoes
- leeks
- vegetable stock

How to make leek and potato soup
Chop the onions and fry for a couple of minutes in a deep pan, then add the chopped garlic cloves and fry some more.
Meanwhile, cut the potatoes into chunks and slice the leeks. Add the leeks to the pan and continue frying until soft.
Add the potatoes and pour over the vegetable stock. Bring to a boil.
Simmer until the potatoes are soft, then blend to your desired consistency.
Season with salt and pepper, and serve with your favourite bread!
As with all soups, make it as thick or as smooth as you like when adding stock and blending. If you like it a little more runny than this recipe, just add a little more water! You could also opt to not blend the soup but instead chop everything up a little smaller and enjoy a chunky soap!

Leek & Potato Soup
Ingredients
- 2 onions (chopped)

- 400 g potatoes (cut into chunks)
- 2 leeks (sliced)
- 1 litre vegetable stock
- Salt and pepper

- You could substitute a third of the stick with vegan milk (eg: almond milk, or coconut milk for a more creamy taste.
