Warm your cockles with this on a cold winter’s evening.

  • 2 onions

  • 2 garlic cloves

  • 400g potatoes

  • 2 leeks

  • 1L vegetable stock

  • Salt and pepper



  1. Chop the onions and fry for a couple of minutes in a deep pan, then add the chopped garlic cloves and fry some more.

  2. Meanwhile, cut the potatoes into chunks and slice the leeks. Add the leeks to the pan and continue frying until soft.

  3. Add the potatoes and pour over the vegetable stock. Bring to a boil.

  4. Simmer until the potatoes are soft, then blend to your desired consistency.

  5. Season with salt and pepper, and serve with your favourite bread!


  • As with all soups, make it as thick or as smooth as you like when adding stock and blending. If you like it a little more runny than this recipe, just add a little more water! You could also opt to not blend the soup but instead chop everything up a little smaller and enjoy a chunky soap!
