One Pot Vegan Pasta

One pot pasta is ideal when you are feeling lazy! Just throw everything in and wait for the pasta to cook!

prep time 5 mins total time 15-20 mins serves 4


ingredients

  • 1 onion

  • 3 garlic cloves

  • 1 courgette

  • 400ml tin of chopped tomatoes

  • 2 cups plant milk

  • 2 cups water

  • 2 tbsp tomato puree

  • 500g pasta

  • Salt and pepper

  • Mixed herbs

  • Nutritional yeast

 

method

  1. Peel and roughly chop the onion in half, peel the garlic and chop the courgette up roughly. Throw it all in a food processor and blend to save time and energy chopping.

  2. Heat up a large pan with some oil. Add in the vegetables and fry for a few minutes until softened.

  3. Add in the chopped tomatoes, milk, water and puree and bring to a boil.

  4. Pour in the pasta, and simmer until the pasta is cooked. Stir once or twice in between to make sure everything is mixed through as it cooks (don’t over-stir though!)

  5. When everything is cooked, season with salt and pepper, shake in a generous amount of nutritional yeast and stir everything once more.


notes

  • Blitzing the vegetables in the food processor is a great lazy hack to some some time. You could throw in whatever vegetables you enjoy. This is also a good way of hiding vegetables for fussy eaters or young children.
