Raw Vegan Passion Brownies
ingredients
1 1/2 cup almonds (210g) (+ extra for topping)
2 cups medjool/halawi dates (350g) (I got some halawi dates in Tesco and they were soooooo much cheaper but very sweet and soft like medjools)
4 tbsp cacao powder
method
Blend the almonds in a food processor until they are fine. This takes time (and is very loud!), so be patient until they are finely ground.
Add the dates and cacao powder to the food processor, and blend together until completely combined.
Line a baking tray and pour in the mixture. Press down with your hands and the back of a spoon until packed in and smooth.
Sprinkle the top with some chopped almonds (or any other nuts you have to hand) and refrigerate to set until completely cooled.
Remove from the fridge and cut into 8 slices.
notes
If your supermarket has almond flour, this can be substituted for the almonds in this recipe.
Try adding in some orange zest for a chocolate orange kick.
