Roasted Spicy Chickpeas

An easy and tasty snack that is as healthy as it is yummy.

Spiced roasted chickpeas are not only a healthy snack, but the perfect thing to serve at a party. Chickpeas are filled with protein, brimming with vitamins and minerals, and legumes are such an important part of a healthy, balanced plant based diet. Adding some harissa paste and cayenne pepper makes these chickpeas into spicy bites of yum.

All you’ll need is:

  • 2 tins of chickpeas, drained and rinsed thoroughly 

  • 2 tbsp olive oil

  • 1 tsp cayenne pepper

  • 1 tsp harissa paste

  • 1 tsp garlic powder 

  • Pinch of sea salt

Start by draining and rinsing the chickpeas, and then patting them dry in a tea towel. Add them to a bowl and pop on your flavourings! I went for harissa, cayenne pepper, garlic powder, sea salt and pepper, with a generous helping of olive oil. You can play around with these spices and flavourings, using things such as pesto, nutritional yeast, cumin, garam masala, curry powder - anything goes!

Toss everything together to coat the chickpeas evenly, and then add to a baking tray. You can use a baking sheet or silicone mat here to stop anything from sticking, but it should be fine without. Roast in a preheated oven at 200°C fan for around 30-35 minutes, or until golden and started to crisp up. Serve up and enjoy!

Why not try sesame seed chickpeas as a different taste?

  • 1 tsp sesame oil

  • 1 tsp garlic powder

  • Good pinch of sea salt

  • 1 tbsp sesame seeds

INGREDIENTS

  • 2 tins of chickpeas, drained and rinsed thoroughly 

  • 2 tbsp olive oil

  • 1 tsp cayenne pepper

  • 1 tsp harissa paste

  • 1 tsp garlic powder 

  • Pinch of sea salt

METHOD

  1. Make sure the chickpeas are as dry as possible, by drying/rolling them on a clean kitchen tea towel.

  2. In a bowl, combine the chickpeas, olive oil, spices and sea salt.

  3. Tip onto a silicone lined baking tray and bake for about 30-35 mins. Half way through, give them a shake to move them about. Keep an eye on them to make sure they don’t burn.

  4. Remove from the oven when they’re golden and serve. They will keep for a couple of days in an airtight container.

notes

  • You can use any mix of spices of your choice. Other tasty options could be pesto, nutritional yeast, cumin, garam masala, lemon juice, curry powder, or some simple salt and vinegar.

  • Try adding nuts to the mix for some added crunch!
