100g bulgar wheat
5 spring onions
1 bunch of mint
1 bunch of parsley
Juice of 2 lemons
Zest of 1 lemon
Salt and pepper
Put the bulgar wheat on to cook, according to the packet instructions, then leave to cool.
Meanwhile, thinly slice the cucumber, tomatoes, and spring onions, and chop the herbs.
Add all the ingredients to a big bowl and stir in together.
Dig in with a big spoon, and enjoy with some hummus and falafels!
