The vegan alternative to scrambled eggs. Enjoy over toast, and with avocado if you're feeling fancy.

- 1/2 red onion
- 1 garlic clove
- Olive oil
- 1/2 red pepper
- 1 tsp turmeric
- 1/2 tsp cumin
- Block (400g) of firm tofu
- 1 tbsp soy sauce
- Salt and pepper
- Large handful of spinach
Chop and fry onion in a pan with olive oil over medium heat until softened.
Meanwhile, chop the pepper.
Add the garlic along with the spices and stir fry for a minute or two.
Add in the red pepper, with a dash of water if needed.
Crumble in the block of tofu with your hands to create the egg-like texture. Stir in with the soy sauce and seasoning. Fry for around 5 minutes, or until everything is cooked.
Finally add in the spinach and stir through until wilted.
Serve over toast for breakfast, or alongside rice and potatoes for a lunch/dinner meal.
- Add whatever vegetables you like or have to hand. Mushrooms or tomatoes would work really well in the scramble.
- Try alongside some avocado (because avo makes everything better).
- Mix in some nutritional yeast or grated vegan cheese for a cheesy scrambled taste.
