The vegan alternative to scrambled eggs. Enjoy over toast, and with avocado if you're feeling fancy.

  • 1/2 red onion
  • 1 garlic clove
  • Olive oil
  • 1/2 red pepper
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • Block (400g) of firm tofu
  • 1 tbsp soy sauce
  • Salt and pepper
  • Large handful of spinach




  1. Chop and fry onion in a pan with olive oil over medium heat until softened. 

  2. Meanwhile, chop the pepper. 

  3. Add the garlic along with the spices and stir fry for a minute or two. 

  4. Add in the red pepper, with a dash of water if needed. 

  5. Crumble in the block of tofu with your hands to create the egg-like texture. Stir in with the soy sauce and seasoning. Fry for around 5 minutes, or until everything is cooked.

  6. Finally add in the spinach and stir through until wilted.

  7. Serve over toast for breakfast, or alongside rice and potatoes for a lunch/dinner meal. 


  • Add whatever vegetables you like or have to hand. Mushrooms or tomatoes would work really well in the scramble. 
  • Try alongside some avocado (because avo makes everything better).
  • Mix in some nutritional yeast or grated vegan cheese for a cheesy scrambled taste.
