VEGAN CHOCOLATE ORGANGE BROWNIES
The most indulgent and rich chocolate brownies that you won't believe are vegan.

- 3 chia eggs (1:3 ratio chia to water: 3 tbsp chia seeds, 9 tbsp water)
- 200g dark chocolate
- 115g vegan butter
- 200g brown sugar
- 1 tsp vanilla extract
- Zest of an orange
- 100g plain flour
- 25g cocoa powder
- 1/2 cup (90g) choc chips
- Splash of soy milk (if mixture needs more moisture)
Preheat your oven to 180 °C (350°F) and line with parchment paper or a silicone mat.
Melt the butter and chocolate in a saucepan over medium heat, stirring constantly, being sure not to burn. Remove from the heat and pour into mixing bowl to cool.
Whisk in the sugar and vanilla to the chocolate butter mix and whisk in 1/3 of the chia eggs at a time.
Fold in the flour, cocoa powder, orange zest and salt. Lastly, fold in the chocolate chips and a splash of milk if needed.
Pour the batter into the baking tray, and bake for 30-35 minutes until brownies come away at the edges.
Leave to cool in the pan, cut into slices and enjoy!
- If you're not a fan of the orange flavour, simply leave out the zest for classic chocolate brownies.
- Add in some vegan white chocolate chunks for a gooey surprise.
