VEGAN MICROWAVE NOODLES
You don’t have to reach for the packet of instant ramen or call for takeaway with this super easy microwave-friendly noodle dish!

Straight to wok noodles (300g) (£0.90)
2 tbsp soy sauce (£0.10)
1 tbsp sriracha (£0.05)
1 tbsp peanut butter (£0.10)
Half head broccoli (£0.31)
50g peas (£0.07)
1/2 red pepper (£0.27)
1/2 cup non-dairy milk (£0.07)
Dice your broccoli and red pepper.
In a bowl or container with a lid, add all of the ingredients and mix thoroughly. If using a container, put on the lid and shake everything together to make it a little easier.
Cook in the microwave on high for 6-8 minutes, stirring in between at around 2-3 minute intervals. The liquid should thicken and its ready when piping hot and the broccoli is cooked.
Use whatever vegetables you enjoy, or that you have in your fridge. Carrots or mushrooms would be a great addition/substitute.
Add some tofu for extra protein and texture!
