Vegan Ploughman’s Baguette

Sometimes we struggle for ideas when it comes to sandwich fillers as a vegan, so why not try a classic ploughman's?

This is less of a recipe and more of an idea to spark your taste buds as a vegan. I know that when I first went vegan, I really struggled to think of what to put in my sandwiches apart from some hummus and cucumber. There are so many more incredible ingredients on the market now when it comes to vegan cheeses, mayonnaise, and even coleslaw, that it makes life a lot easier!

The ingredients, as always, are super accessible and easy. Pantry staples! All you’ll need is:

  • 2 long batons/baguettes

  • 3⁄4 slices Vegan cheese

  • 2 gherkins, sliced

  • ½ large tomato, sliced

  • ½ apple, sliced

  • Lettuce leaves, washed (we used romaine)

  • Vegan coleslaw

Layer up your roll starting with vegan butter, lettuce, your favourite vegan cheese (we used violife’s smoked slices), slices of gherkin, apples, tomatoes, and finally top with coleslaw.

Ingredients

  • 2 long baton type rolls

  • 3-4 slices vegan cheese

  • 2 gherkins, sliced

  • ½ tomato, sliced

  • ½ apple, sliced

  • Lettuce leaves, washed (we used romaine)

  • Vegan coleslaw

METHOD

  1. Cut the roll in half and spread with vegan butter.

  2. Place the lettuce first, then the cheese slices in the roll.

  3. Top with the gherkin, then sliced tomatoes, gherkins and apples, all finished with coleslaw.

  • You can swap the coleslaw for a chutney or pickle of your choice
