VEGAN PROTEIN COOKIES
Delicious bites of protein to enjoy as a filling snack
prep time 5-10 mins total time 20-25 mins makes 6 cookies
1 cup (90g) oats
1/4 cup (80g) maple syrup
1/4 cup (65g) peanut butter
1 scoop protein powder (I used Vivo Life madagascan vanilla*)
1 tsp cinnamon
1/4 cup (60-65ml) milk
Pinch of salt
1/4 cup (40g) chocolate
Preheat your oven to 180C (350F).
Add all of the ingredients, except the chocolate, into a food processor and blend until it comes together to form a dough.
Chop up the chocolate into small chunks.
Combine the dough with the chocolate and form 6 cookies.
Add the cookies to a lined baking tray and bake in the oven for 12-15 minutes.
Leave to cool (if you’re disciplined enough!), and enjoy with a cup of tea :)
