VEGGIE TRAY BAKE
Super lazy and super tasty, tray bakes are the ideal mid-week meal.
prep time 5 mins total time 45 mins serves 2
5 garlic cloves
1 red onion
1 sweet potato
1 red pepper
1 yellow pepper
Handful of tomatoes
Drizzle of olive oil
Salt and pepper
Pack of vegan sausages*
Preheat oven to 200C/350F
Quarter the red onion and chop the potato and peppers into bite-sized chunks.
Add the chopped vegetables, along with the garlic cloves and tomatoes into a large baking dish.
Drizzle over a generous amount of oil, and season with salt, pepper and mixed herbs.
Cook in oven for 25-30 minutes, until potato has softened. Give everything a shake/turn.
Add in the sausages and cook for further 10-15 minutes. Serve and enjoy!
*I used 6 Linda McCartney red onion and rosemary vegetarian sausages
As I always say, add whatever vegetables you like! The principle behind this meal is simple. I always use garlic and onion for flavour, but the rest you can experiment with!
