Super lazy and super tasty, tray bakes are the ideal mid-week meal.

  • 5 garlic cloves

  • 1 red onion

  • 1 sweet potato

  • 1 red pepper

  • 1 yellow pepper 

  • Handful of tomatoes

  • Drizzle of olive oil

  • Salt and pepper

  • Mixed herbs

  • Pack of vegan sausages*



  1. Preheat oven to 200C/350F

  2. Quarter the red onion and chop the potato and peppers into bite-sized chunks.

  3. Add the chopped vegetables, along with the garlic cloves and tomatoes into a large baking dish.

  4. Drizzle over a generous amount of oil, and season with salt, pepper and mixed herbs.

  5. Cook in oven for 25-30 minutes, until potato has softened. Give everything a shake/turn.

  6. Add in the sausages and cook for further 10-15 minutes. Serve and enjoy!


  • *I used 6 Linda McCartney red onion and rosemary vegetarian sausages

  • As I always say, add whatever vegetables you like! The principle behind this meal is simple. I always use garlic and onion for flavour, but the rest you can experiment with!
