5 Minute Banana Split
Creamy, fresh and full of my all time favourite flavours, this vegan banana split makes a great snack or dessert and only takes 5 minutes.
What I love about this take on a banana split is that it actually makes a great breakfast as well! Instead of topping the bananas with ice cream I’ve used creamy coconut yoghurt. Of course, if you’d like to make it a little more decadent feel free to swap this out for your favourite ice cream!
This banana split recipe is a great one to try if you have a few older spotty bananas lying around. The older bananas tend to be much sweeter which makes them perfect for something like a banana split dessert.
The bananas are then topped with vegan yoghurt. I used coconut yoghurt as the flavour combination of the coconut and the banana is dreamy. But you can use any kind of vegan yoghurt you fancy.
The banana splits were then topped with peanut butter, some berries and then drizzled with melted chocolate and a sprinkle of dessicated coconut.
SUBSTITUTIONS
The reason why I love this recipe is that it is so flexible. You can swap out any ingredient really depending on what you have in your fridge or what you most love.
Raspberries: Any kind of fruit small enough to be sprinkled on top: strawberries, blueberries, blackberries, chopped kiwi, passionfruit etc.
Peanut butter: Almond butter, cashew butter, hazelnut butter, nutella, biscoff spread
Coconut yoghurt: Soy yoghurt, vegan ice cream, vegan whipped cream
Coconut flakes: Desiccated coconut, coconut chips, granola, muesli, nuts, almond flakes, chopped hazelnuts, cacao nibs, chopped chocolate, your favourite chocolate bar chopped, crumbled vegan biscuits
Ingredients
1 Banana
50g dark chocolate
2-4 tbsp vegan yoghurt (I used coconut)
1-2 tbsp peanut butter
Handful of fresh berries
Sprinkling of coconut flakes
METHOD
Cut your banana in half lengthways and assembled on a plate with the middle facing upwards.
Melt the chocolate in the microwave or on the hob.
Layer your toppings starting with a few dollops of yoghurt, some peanut butter and a handful of berries. Drizzle over the melted chocolate and finish off with a sprinkling of coconut flakes.
NOTES
Choose a banana that is brown and overripe for extra sweetness!
