BBQ Jackfruit Lettuce Cups

If you haven't tried Jackfruit yet then you need to add it straight to the top of your to-try list. The cousin of figs and mulberrys, it's a big and bumpy tropical fruit found on a Jack Tree. In fact, its the largest fruit to grow from a tree (it can grow up to a metre!).

It has a high protein content compared to other fruits and when cooked it closely resembles pulled meats. This mouth-watering recipe is perfect if you want to introduce vegan foods to meat eaters or simply love trying different meat substitutes. The fleshy meat of the fruit takes on flavours and spices amazingly when cooked.

This BBQ jackfruit recipe is SO easy too. You only need 3 ingredients to create the most meaty and juicy appetizer or lunch. I love serving this as a starter if I'm hosting a dinner party or special meal at home.

ingredients

  • 400-500g tin of jackfruit

  • 1/4-1/2 cup (70g-140g) BBQ sauce

  • 6-8 baby gem lettuce leaves

optional

  • Chilli

  • Lime

  • Coriander

method

  1. Drain the jackfruit if in water, and heat up some oil in a pan over medium to high heat.

  2. Add in the jackfruit and break apart with the spoon (this can also be done before adding into the pan). Fry for a few minutes.

  3. Add in the BBQ sauce and stir to mix through. Fry for 10-15 minutes until thickened and caramelised.

  4. Prepare the lettuce by removing the outer layers and lay on serving plate. Dish the jackfruit into each cup, and if using extras, squeeze the lime on top and sprinkle over some chopped chilli and coriander.

  • This BBQ jackfruit recipe is very versatile and can be used many different ways! Why not try it as a burger, just swap the lettuce cups for burger buns and add in some onion and vegan cheese, or try it scattered on top of my Ultimate Vegan Mac & Cheese to create a hearty dish full of flavour!
