Minty Mushy Peas
Mushy peas are a definite love/hate side dish. I personally adore it, when done properly. Too often you get served a pile of mush, devoid of colour and flavour. I want to share how to make mushy peas taste delicious and look vibrant every time!
For the mushy peas we’ll be using:
200g frozen peas
Handful of chopped mint
Drizzle of olive oil
Juice of half a lemon
1 tsp salt
The key to a vibrant bowl of mushy peas is not to cook them. Simply thaw them from frozen in boiling water for 5-10 minutes, until they aren’t frozen anymore. The green colour of the peas disappears as soon as they become overcooked. From there we can add all the yummy flavour!
Use a hand blender, or a fork, to mush your mushy peas to your preference. I personally love some lumps as it feels more rustic and homemade! Adding in the lemon juice and olive oil makes it smoother, while the mint adds a delicious complementary flavour.
