Goldenberry Energy Balls
These vegan energy balls are so easy to make - you can whip them up in a few minutes and they just need to be left in the fridge to firm up.
They’re made with goldenberries, also known as amour en cage (‘love in a cage’) named for the papery calyx that encases the fruit. They are packed full of antioxidants which are known to protect against damage caused by free radicals (the atoms that cause aging and disease).
I got mine from Nature’s Heart (Holland & Barrett) but you can also get them from places like Planet Organic.
You start by gathering your ingredients, blitzing them in a food processor and rolling them into small balls.
Now transfer your energy balls into the fridge to firm up for an hour or two.
Then you get your cacao powder and roll them around so that the goldenberry energy balls are nicely covered.
And you’re done! I told you it was easy.
ingredients
30g pumpkin seeds
30g cacao nibs
50g dried goldenberries
2 tbsps chia seeds (optional)
25g maple syrup
100g rolled oats
1 tsp vanilla extract
zest of 1 orange (optional)
25g coconut oil (melted)
2 tbsps cacao powder to coat balls
method
Soak the dried goldenberries in boiling water for abot 10 minutes and drain the excess liquid.
Add all the ingredients to a food processor and pulse until combined.
Roll into small firm balls and place on parchment paper. Set in fridge for 1-2 hours.
Sift the caco powder into a bowl, remove the balls from the fridge, and roll each one in the caco powder. Store in an airtight container in the fridge.
