Vegan Basil Pesto

Vegan Basil Pesto

The zestiest, freshiest pesto

prep time 5 minutes total time 10 minutes serves 2


ingredients

  • Big bunch of basil (~50g)

  • Big handful of pine nuts (3-4 tbsp)

  • A healthy glug of olive oil

  • Salt and pepper

  • Juice of 1/2 a lemon

 

method

  1. Remove any large basil stalks, and add all the ingredients to a food processor.

  2. Blend until your desired texture - add a little extra water or oil if the mixture needs help blending.

  3. Taste, and adjust the flavour if needed, then serve up!


notes

  • Customise the recipe to your preference - e.g. sub out oil for water, pine nuts for cashews, or add garlic and nutritional yeast to taste.
