Vegan Basil Pesto
ingredients
Big bunch of basil (~50g)
Big handful of pine nuts (3-4 tbsp)
A healthy glug of olive oil
Salt and pepper
Juice of 1/2 a lemon
method
Remove any large basil stalks, and add all the ingredients to a food processor.
Blend until your desired texture - add a little extra water or oil if the mixture needs help blending.
Taste, and adjust the flavour if needed, then serve up!
notes
Customise the recipe to your preference - e.g. sub out oil for water, pine nuts for cashews, or add garlic and nutritional yeast to taste.
