Marmite, avocado and mushroom toastie

These flavour-filled swirls are ideal finger food to be enjoyed by friends and family

Sometimes a toastie is all you need! Combining avocado and tomatoes with marmite and mushrooms makes this toastie a bit different, but full of unexpected and delicious flavour combinations. The combination of salty, fatty, and juicy really is the key to a successful sandwich. Ideal if you’re trying to incude more plants in your diet, but still want to enjoy a midday sandwich, or for those who are giving veganism a go and trying new options for toastie and sandwich fillings. This works perfectly for breakfast, lunch or a snack!

All you’ll need is:

  • 4 slices of bread

  • Marmite, to taste

  • 1 avocado, sliced

  • 100g mushrooms, sliced

  • 8 cherry tomatoes, sliced

  • Salt & pepper

  • A couple of sprigs of coriander

  • Drizzle of sriracha (optional)

Start by chopping up the mushrooms and frying in a pan with a little olive oil, and salt and pepper.

Meanwhile, start off your toastie with a spreading of vegan butter (my favourite is the Naturli block), and topping with marmite adds saltiness and depth. The Marmite makes this the perfect choice for breakfast too - I am a lover of Marmite, and have been since I was very little. From here we can add the remaining ingredients that make up the perfect toastie.

Begin with the freshly sliced avocado, along with a squeeze of lemon juice to bring out the flavours. When your mushrooms are ready add them onto the avocado, and then top with the tomatoes.

Season with salt and pepper, add coriander, and then drizzle with an optional squeeze of sriracha (highly recommended - avocado and spice go hand in hand). Close the sandwich with the other slice.

Add to a pan (or a toastie machine if you have one) with a splash of olive oil over medium to high heat. Fry on each side until golden brown, approximately five minutes.

INGREDIENTS

  • 100g mushrooms, sliced

  • 4 slices of bread

  • Vegan butter, to taste

  • Marmite, to taste

  • 1 avocado, sliced

  • Salt & pepper

  • Drizzle of sriracha (optional)

METHOD

  1. Put the mushrooms on to gently fry (10 mins) while you make your toastie.

  2. Thinly spread vegan butter, and then Marmite on 2 of the slices of bread.

  3. Slice the avocado and squeeze a little lemon over them. Divide the avocado and place on top of the bread slices.

  4. When the mushrooms are ready, place them on top of the avocado, followed by the tomato. Season with salt and pepper, add the coriander, and drizzle with a little sriracha (if using). Then close with the other slice of bread.

  5. In a frying pan heat a little olive oil, then add the sandwiches to the pan and gently cook for 5 mins on each side until golden brown and toasted.

notes

  • Omit the Marmite if you aren’t a huge fan, as this will still be a delicious toastie!

  • Try different options for the mushrooms if you prefer - for example fried peppers, spinach, artichoke, or red onions.
