Brussel Sprouts with Walnuts & Cranberries

Add something extra to your brussel sprouts this festive season!

prep time 5 minutes total time 15 minutes serves 4-6


ingredients

  • 500g brussel sprouts

  • Handful of walnuts

  • Handful of cranberries

  • Knob of vegan butter

  • Salt and pepper

 

method 1

  1. Remove any tough outer leaves and score a cross with a knife on the base of any larger brussel sprouts.

  2. Fill a large pan with water, bring to the boil and add a pinch of salt.

  3. Add the brussel sprouts to the pan and simmer for 5-8 minutes until tender.

  4. Drain and add to a bowl. Stir through the butter, add in the cranberries and walnuts. Season with salt and pepper.


notes

  • If you aren’t a fan of walnuts and cranberries, then enjoying these brussel sprouts plain is perfect if you prefer a simpler dish.
