Ultimate Roast Potatoes

Ultimate Roast Potatoes

Learn how to make the perfect roast potatoes, with my mum’s simple and tasty recipe!

prep time 15 minutes total time 45-50 minutes serves 4-6


ingredients

  • 1kg potatoes (Maris Piper)

  • 2-3 tbsp rapeseed oil

  • 2-3 tbsp vegan butter

  • 2 tbsp semolina (or flour)

  • Salt

 

method 1

  1. Preheat oven to 200°C (390°F).

  2. Peel and cut up in half or into quarters (depending on the size of the potato).

  3. Fill up a large pan with water, add in the potatoes and bring to a boil with a pinch of salt. Once boiling, reduce to a simmer and par boil for 10 minutes.

  4. Meanwhile, add the oil and vegan butter to a large baking tray and preheat in the oven for 5-10 minutes.

  5. Drain the potatoes in a colander and shake well to fluff up the edges.

  6. Sprinkle over the semolina until coated.

  7. Take out the baking tray from the oven and carefully add the potatoes. Coat the potatoes in the oil and butter and season with salt and pepper.

  8. Add to the oven and roast for 30-35 minutes, turning once in between and re-coating the potatoes in the oil and butter. They’re ready when they’re crispy and brown around the edges.


notes

  • You can add herbs like rosemary or thyme for extra flavour.

  • If they take longer than 30-35 minutes in your oven, give them another turn and keep cooking until they are golden brown.
