Easy Vegan Hash Browns
ingredients
1 onion £0.10
2 potatoes (350g) £0.35
1 carrot £0.06
1-2 tbsp olive oil (plus extra for frying)
3 tbsp cornflour* £0.10
1 tsp cumin, paprika, mixed herbs
Salt and pepper

method
Finely chop your onion (or grate), grate your potatoes and carrot.
Add your veg to a large mixing bowl. Grab a teatowel, and add the veg mixture into the teatowel. Squeeze the excess water from the veg mix into the mixing bowl. Discard the water.
Put the veg mix back into the mixing bowl and season with your spices, salt and pepper. Drizzle in the olive oil and stir through the cornflour. Test the mixture and if it’s too wet, add more cornflour. If too dry, add more oil.
Once mixed, shape the hash into 6-8 hash balls, place on a plate and then gently press them into patties.
In a large frying pan, heat up some oil. Once hot, add your patties to the pan, cooking each side for 3-5 minutes until golden brown, and then turning.
Cook until golden brown on both sides, and serve your vegan hash browns with some sliced spring onion on top (plus some ketchup!).

*If you don’t have cornflour, use ordinary flour.
