Garlic Mushroom & Balsamic Tomato on Toast

One of my favourite breakfasts of all time: it’s cheap, simple and absolutely delicious

prep time 10 minutes total time 30 mins serves 1-2


ingredients

  • 250g-300g mushrooms £0.55

  • 2 garlic cloves £0.10

  • 200g cherry tomatoes £0.54*

  • 1-2 tbsp balsamic glaze

  • Two slices of bread £0.20

  • Olive oil/vegan butter

  • Salt and pepper

 

method

  1. Pre-heat your oven to 200C, and meanwhile add your tomatoes to a baking tray. Drizzle over a generous amount of olive oil and balsamic glaze, and season with salt and pepper.

  2. Quarter your mushrooms and mince the garlic.

  3. Add the tomatoes to the oven to cook for 15-20 minutes.

  4. Meanwhile, heat a frying pan with olive oil over medium heat. Once the oil is warmed up, add in the minced garlic and stir through. Be careful not to burn the garlic with too high heat!

  5. Add in your mushrooms and coat in the garlic and oil. Season with some salt and pepper. Leave for a few minutes to reduce down.

  6. Stir the mushrooms every now and then, but don’t over-stir them. Continue frying until they’ve reduced, around 15 minutes.

  7. When everything is ready to go, pop your toast into the toaster and drizzle with some olive oil, or spread with vegan butter.

  8. Top your toast with the mushrooms and tomatoes, and enjoy!


notes

  • This dish is super affordable, at only £0.70 per serving.

  • *This is based on cherry tomatoes, rather than vine tomatoes like I used in the video, as these are more expensive. If you aren’t on as much of a budget, opt for the vine tomatoes as they taste delicious.

  • The key to perfect mushrooms is to season them well, and make sure not to let them get watery by over stirring or not cooking them for long enough. Leave them to do their thing and make sure to taste them and adjust the seasoning.

  • Add some avocado on your toast to make this even more yummy (but maybe less affordable).
