5 Minute Olive & Tomato Bruschetta

An Italian classic and accidentally vegan, bruschetta are such a great option for lunch or as a starter or appetizer. I decided to make these a little different to the classic version by adding some olives, onion and nutritional yeast.

The key thing with bruschetta is to get hold of really fresh high quality ingredients. That means aim for the best seasonal tomatoes you can find making sure they are nice and ripe.

You can’t beat dips. To dollop in a wrap, dip with a carrot, slather in a sandwich or serve as an aperitif when you’re having friends.
